We had a very successful and enjoyable tasting last night at l’etoile restaurant, and I hope many of you had a chance to sample our lovely cheese and holiday meat selections as well. In case you couldn’t make it last night or didn’t get to take home a cheese with you, I invite you to read on for short descriptions of our cheese and meat items. If you are interested in getting any of these delicacies for your holiday celebration, please order no later than 4:00 pm on Friday 12/17/10. This will ensure delivery next Wednesday and a great holiday feast for you and your loved ones!

Bleu d’Auvergne (France)
Bleu d’Auvergne is produced in the “Massif Central” between Puy-de-Dôme and Cantal. Although sheep are mostly raised there, producers use cow’s milk for Bleu d’Auvergne, which gives it a creamier taste than Roquefort, made with ewe’s milk. The smell of Bleu d’Auvergne is strong, spicy with flavors of grasses and wild flowers. It pairs perfectly with a sweet white or a bold, full red that can stand up to its magnificent coloring and flavor. A Wine Guild favorite!!

Testun al Barolo (Italy)
Testun al Barolo is a semi-firm mixed milk cheese from the Piedmont region of Italy. The cheese has a beautiful complex flavor thanks the sweet and grassy milk from alpine pastures and its aging process. It ages for a minimum period of four months in small oak barrel under the residues of the Nebbiolo grapes, the grape to make Barolo wine. The fruity wine flavors seep into the crumbly paste. This adds a little bit more of complexity to its flavor.

Manchego (Spain)
Manchego cheese is the most important and well-known sheep’s milk cheese in Spain. The true Manchego cheese is made only from whole milk of the Manchega sheep raised in the “La Mancha” region, hence the name. This selection highlights the creamy texture and strong, nutty flavor in the relatively young cheese, making it the perfect accompaniment with a light dish or on its own with bread and olive oil. While the flavors aren’t shy on the tongue, the balance of the sweetness, creaminess, and nuttiness is such that the taste does not overwhelm the palate. A must-try and a new favorite here at the Guild!

Piave Vecchio (Italy)
Often likened to the king of Italian cheese, Parmigiano-Reggiano, Piave is a deliciously nutty, pasteurized cow’s milk cheese from the Veneto in northern Italy. It has a concentrated sweet, crystalline taste with a slight almond bitterness. Aged for twelve months, Piave is wonderful as a table cheese, shaved over a salad of bitter greens, or enjoyed with an aperitif. Like Parmigiano, Piave has an affinity for both red and white wine.

Creminelli Salami Barolo
